Chinese Chicken Manchurian
Ingredients
• Chicken - 500 gm (1 lb cut into medium sized pieces)
• Capsicum ½ sliced
For the Batter
• Egg - 1
• Corn flour - 2 tbsp
• Plain flour - 2 tbsp
• Salt - 1 Tsp
• Black Pepper Powder - 1 Tsp
• Soya Sauce - 2 Tsp
For Manchurian Sauce
• Ginger crushed - 2 tbsp
• Garlic crushed - 2 tbsp
• Green Chili finely chopped- 1
• White Part of Spring Onion or Onion finely chopped - 1/4 cup
• Red Chili Sauce - 1 tbsp
• Tomato Ketchup - 2 tbsp
• Soy Sauce - 2 tbsp
• Vinegar - 1 Tsp
• Oil - 2 tbsp
• Black Pepper powder - 1 Tsp
• Salt - to taste
• Spring Onion (Green part chopped for garnish ) - 3-4 tbsp
• Corn Flour - 1.5 tbsp
• Water depending on sauce needed - about 3 cups
Method
• Chicken cut into medium sized pieces. Wash the chicken pieces and pat it dry using a kitchen towel.
• Take all ingredients to make the batter - the egg, corn flour, plain flour, salt, pepper powder and soy sauce in a mixing bowl. Mix the chicken pieces with this so that it coats all the pieces very well.
• Heat oil in a pan and fry the pieces till it turns golden brown. After 7 minutes of frying on one side, flip the chicken pieces and cook for another 5 minutes. Remove the cooked chicken pieces and leave it on a plate
• Now let’s make the sauce. First, mix the cornflour with about ¼ cup of water and keep aside. Heat oil in a wok or frying pan. Add the crushed ginger, garlic, finely chopped chillies and white portion of the spring onions. Saute for few minutes.
• Add the tomato ketchup, chilli sauce, soy sauce and vinegar. If you are adding capsicum, add it now.
• Add the water or chicken stock whichever you have on hand. Bring to a boil. Add required salt and black pepper powder. Taste the sauce and add a pinch of sugar if it is too sour
• Finally, add the cornflour mixed water. Mix the cornflour with about ¼ cup of water. Once it boils, the sauce will start getting thicker. Add the chicken pieces and cook on low heat for 5 minutes.
• Switch off and garnish with the spring onion greens.
Orange chicken
Ingredients
Chicken Breast - 1 lb (2 big breasts)
Egg - 1
Salt - 1/2 Tsp
Ground Black Pepper - 1/4 Tsp
Corn Starch - 2 + 1 tbsp
Water - 1/4 cup
Green Onions - 3 stalks (finely chopped)
Dried Red Chilly - 4 (chopped)
Sauce Mix
Orange Juice (preferably fresh squeezed) - 1.5 cup
Ginger grated - 1/2 tsp
Garlic Grated - 1 clove
Brown Sugar - 4 tbsp
Soy Sauce - 2 tbsp
Chili Garlic Sauce - 1 tbsp
Sesame Oil - 1 tbsp
Salt - to taste
Method
• Wash the chicken and cut it into small pieces.
Mix the chicken with salt, pepper and lemon juice.
Add the egg and 2 tbsp of cornstarch to the chicken pieces and mix well.
• Deep fry the chicken pieces till they turn light brown. Remove the chicken pieces onto a plate lined with paper napkin to absorb the excess oil.
• Mix all the ingredients under ‘Sauce Mix’.
• Add the ‘sauce mix’ to a pan and bring it to a boil.
Mix 1 tbsp of cornstarch with ¼ cup of water, Add this gradually to the sauce till the sauce thickens up.
• Add the fried chicken pieces, dried red chilly and green onions to the sauce.
• Simmer for few minutes and switch off.
• Garnish with dry orange peel or green onions and serve over steamed rice.
