Shahi tukra is a popular dessert and It really gives a royal treat to our taste buds in every bite we take. It is nothing but a bread pudding, where crunchy bread toasts are topped with rich condensed milk or rabri with aromatic saffron and cardamon and nuts.It is simple and easy to prepare this dessert cum sweets and tastes delicious either warm or chilled.
Ingredients
- Milk - 6 cups
- Bread - 4 slices (cut into small cubes/triangles)
- Sugar ( for rabri) - 3 tbsp
- Sugar (for sugar syrup) - 1/2 cup
- Water (for sugar syrup) - 1/2 cup
- Ghee - 1/2 cup
- Cardamom Powder - 1/2 tsp
- Saffron - 1/2 Tsp
- Dates Syrup - 2tbsp
- Chopped Nuts (Almonds, Pista, Cashews etc) - 2 tbsp
Method
- Pour milk into a heavy-bottomed pan and bring to a boil. Lower the heat and cook for about 50 min. Keep stirring until it reduces to half of its original quantity
- Pour sugar, cardamom powder and saffron on this mixture and switch off.
- You can also be used sweetened condensed milk in this step.
- Heat the sugar and water for few minutes to make a sugar syrup. Remove from heat and keep warm.
- Now cut the bread into small cubes, triangle or desired shapes by using a cookie cutter and make interesting shapes
- Pour ghee into a frying pan and heat well.
- Fry the bread slices till it is golden brown colour and crisp.
- Soaking this warm bread slices in the sugar syrup for about 2 min.
- Arrange the sugar soaked bread slices on a plate or you can arrange them on a plate and pour the sugar syrup on top.
- Pour rabri on this fried bread slices and Garnish with chopped nuts and dates syrup. If you do not have dates syrup, no problem you can use some chopped date. Just fry chopped dates in some ghee and use it as a topping
- Serve this warm when the bread slices are still a bit crunchy. Refrigerate and serve chilled.
Notes:
- This is a nice way of using old bread. In fact, Old and dry bread absorbs less ghee while frying.
- You can make this dessert with any type of bread like white, brown, whole grain, multigrain etc.
- If you are health conscious you can fry the bread slices in oil instead of ghee.
- Pour the rabri just before serving.
- A quick process of preparing rabri: Soak and grind 20 almonds and 10 cashew nuts with sugar and cardamon. Make it into a smooth paste and add to the boiling milk. This will fasten the thickening process of the radio It will give an additional rich and nutty taste to the milk.
- The dish can be made richer by using mewa on toasted sugar syrup dipped bread pieces and then poured chilled rabri.
Bread Rasmalai Recipe
Ingredients:
- Whole Milk-1 litre
- White bread slices-6
- Sugar-50 gms
- Cashew nut- 10 to 12 (crushed/ powder)
- Pistachio- 10 to 12 (chopped)
- Almonds- 8 to 10 (chopped)
- Ghee – 1 Tsp
- Condensed milk – 2 tbsp
- Saffron – 4 strands
- Cardamom powder – 1/4 tsp (optional)
Instructions:
- Take a wide heavy bottomed Pan, grease it with ghee and add condensed milk + milk. Add 1 tbsp milk powder for thickness and flavour. Bring to a boil and reduce to low flame. Keep stirring until it reduces to half of its original quantity
- Take 2 tbsp of warm milk, mix saffron strands, keep aside. Add the saffron milk to the boiling and keep stirring. Then add the sugar and stir it until it reduces in volume. The mixture is called rabri. switch off and refrigerate it.
- Heat ghee and Fry the nuts. Add cardamom powder, nuts to the rabri and mix well.
- Meanwhile, Cut the bread slices into small circles using a steel glass or any cookies cutter. At the time of serving to take a bowl add the rabri and drop the bread rounds. Refrigerate it for 2-3 hours.
- Delicious easy bread rasmalai ready. Serve it chilled.
