Chicken Fried Rice



Ingredients:
  • 3 cups of cooked rice 
  • 1 cup of mixed vegetables ( carrots, French beans, cabbage, capsicum) 
  • 1 cup of cubed boneless chicken pieces 
  • 1 small bunch of celery stalks 
  • 1 small bunch of spring onions
  • 2 tsp of soya sauce
  • 1 tsp of green chilli sauce
  • 2 tsp of tomato sauce
  • 1 tsp of corn flour
  • 1 tbsp of freshly minced ginger 
  • 2 tbsp of freshly minced garlic
  • 2 onions, sliced
  • 1 tsp of freshly cracked black pepper
  • 2 tbsp of oil


Instructions :

1.Mix  1 tsp pepper powder, some salt,1 tsp of corn flour and 1/2 tsp ginger garlic paste soya sauce with cubed chicken pieces. Let marinate for 30 mins and lightly saute in some oil.

2. Heat some oil in the same pan and fry onions on medium heat, don’t let them brown too much. Add the ginger, garlic and fry for 2 mins.

3. Then Add the finely chopped vegetables and celery cook for 2-3 mins. Add soya sauce, tomato sauce, green chilli sauce and Fry on high heat. Reduce flame to medium-high, stirring constantly. The vegetables should be cooked yet crunchy not soft.

4.If you want to add some eggs to the chicken fried rice, scramble a couple eggs with salt and pepper and mix well. Add the chicken pieces and stir well to combine

5. Finally,  add the cooked rice and stir well. Check for salt. Add the pepper powder and spring onions and mix well. 
Switch off the flame. Chicken Fried Rice is ready to serve.
